For this project I created a timeline of the history of sushi from our reading, The Story of Sushi: An Unlikely Saga of Raw Fish and Rice by Trevor Corson. This book goes behind the scenes at America’s first sushi-chef training academy. Kate, who is a twenty-year-old woman arrives at the academy in Los Angeles and is unprepared for the challenges ahead: knives like swords, instructors like samurai, prejudice against female chefs, demanding Hollywood customers, and so on. While at the same time Corson delivers biology and natural history of the edible creatures of the sea, and tells the fascinating story of an Indo-Chinese meal that was reinvented in nineteenth-century Tokyo as a cheap fast food. Revealing the story of pioneers who brought sushi to the United States and explored how this unlikely meal exploded into the American heartland just as the long-term future of sushi may be unraveling. This reading was definitely interesting and I enjoyed reading not only the background stories of the characters, but also the history of sushi itself.
